HEAD BAKER

A 39-year-old workforce development agency is launching a social enterprise artisan bakery and café.

The purpose of developing this venture is to provide transitional job opportunities to those with barriers to 

employment, create awareness for the agency’s mission, and fill a market gap by producing high-end 

artisan bakery and café products to be sold in the heart of Downtown Cleveland. 


GENERAL DUTIES

A crucial and vital role to the success of the artisan bakery and café is that of the Head Baker. The Head Baker will be responsible for the overall production of bakery products (breads, pastries, lunch options, etc) and the training and oversight of mission staff (transitional employees). The Head Baker will be trained in the recipes formulated especially for the social enterprise bakery and then will be responsible for training other bakery production workers, oversee quality and provide a structured, coaching-oriented supervisory style.  Must be willing to work with trainees that have limited prior baking experience and may have had involvement with the criminal justice system.  


SPECIFIC RESPONSIBILITIES

The head baker will be responsible for: Overseeing daily production fulfillment, mixing formulations, dough processing, production line shaping and dividing, retarding, proofing, and knowledge of operating equipment.

  • We are looking for a passionate team player that has an eye for quality and is able to recognize when a product is below the accepted standard.

  • In the first instance, the Head Baker should be able to follow the methods and recipes as laid down during to training process, and ultimately be able to innovate as required.

  • The Head Baker should be able to inspire his co-workers, and have a friendly but firm approach to them.

  • The Head Baker needs to be very open to the new methods and recipes that they will be learning, which will almost certainly be different from what he they are used to.

  • The Head Baker will oversee all operations of the bakery production.

  • The Head Baker needs to be physically strong, and able to work on their feet for at least an 8-hour stretch.

  • The Head Baker will be in charge of ordering all the ingredients as prescribed during the training process, and maintaining adequate stock levels of the same.

  • The Head Baker will be the production manager as well, ensuring that the correct products are produced everyday in the required quantities and quality, and in a timely fashion, in order to meet the deadlines of the business.

  • The Head Baker will be responsible for ensuring that the staff arrive and leave on time, and for monitoring their work. S/He needs to build create a positive working environment and strong sense of teamwork to promote productivity.

  • The Head Baker will be required to meet gross profit margins by means of minimizing wastage.

  • The Head Baker will be expected to have a thorough knowledge of all the products and processes, and, if need be, to be able to explain these to any customer who requires information.

  • The Head Baker will be required to maintain all the necessary paperwork in an organized fashion.

  • The Head Baker will be required to ensure that the health and safety standards are maintained, and be fully conversant with the requirements as laid down by the food and safety inspectors.

  • The Head Baker will be responsible for training production staff who may or may not have any bakery or culinary training. The mission staff (transitional employees) are expected to have little prior training and are expected to gain valuable job experience and training within the bakery. 

  • During the mission staffs’ transitional period (6months to 1year) the Head Baker will be responsible for ensuring their individual success along with ensuring the end product is held to the bakery’s quality standard.


QUALIFICATIONS 

The minimum qualifications for this position are as follows:

  1. Min of 4 years culinary experience and or training. 

  2. Bakery experience preferred. 

  3. Culinary degree or relevant experience. 

  4. Supervisory experience

  5. Proven experience training other staff in culinary / baking

  6. Able to use Microsoft Office suite 

  7. Demonstrated understanding of and passion for the mission of Towards Employment, including 

  8. Willingness to work with ex-offenders and others with barriers to employment. 


WORKING CONDITIONS

The Head Baker will be responsible for managing and running our production site (commercial kitchen). Working conditions will include temperature differentials, heavy lifting, cooking ingredients in the air, etc. 


PHYSICAL REQUIREMENTS

The Head Baker must be able to lift 50lbs on a recurring basis. 


DIRECT REPORTS 

All production staff (bakers and assistants) will report to the Head Baker.
